Winter Steelhead !

2-3-2012 Winter Steelhead are showing up on the Oregon coast and in some pretty good numbers. The early hatchery runs were good in December and January and now the broodstock and natives are piling in. The last couple shots of rain have really pulled in large schools and that should continue for the month of February and March. Basically there are fish in most streams, you just have to pick a spot depending on weather, water height and of course fishing pressure. I like to fish smaller streams in high water and then as rivers drop and clear head for the larger rivers. A lot of things work for steelhead but my favorite choice is boraxed cured eggs together with a corky or yarn. Pink ,orange, and red seem to work well but green has a spot in my tackle box as well. Sand Shrimp work well if you can find them too. In really clear water I like small baits of just eggs. 10-30-11 Its been a busy 2 months so I have been kind of quiet but here's the latest! The fresh egg season has ended and it was good. We have a good supply of cured eggs and some frozen uncured. The egg season was a quick one because it was mostly all King eggs. They came in August and September and then it was done. The coho run as predicted was down and the B run just hasn't shown at all. So if its frozen uncured you are after contact us soon!! Another exciting thing that happened was I was invited to do a short interview on egg curing with Lance Fisher of Northwest Outdoor Adventures Show. It was a first for me doing that sort of thing but I think it came off pretty good. The show is capturing a larger and larger audience all the time and it was fun to be a part of it. Lance is a great guy and you feel real comfortable talking on the show with him. We plan to do more and we will see how it goes! For me its time to do a little fishing and see if these eggs I am curing are up to snuff!! Check our gallery pics out in a month or two and see what's biting. Good luck fishing!! Ed

Flash frozen eggs-Pre butterflied

After a couple requests for Flash frozen eggs already butterflied we thought others might also be interested in this product, so I took fresh nice clean small King eggs and butterflied the skeins and trimmed the ends if needed and froze them in 2lb bags. It will eliminate the waste of cutting frozen and then thawed eggs! They are ready to cure when thawed. This would be a great product for making small baits for steelhead and trout fishing! Its not to early to think about getting on our 2011 fresh egg list. The fresh egg season begins with Spring Chinook roe in June-July, but the majority of our supply comes August- October and a few in November. August is the month for King eggs and September begins the coho or silver roe season. There are different ways to make connections with us, Locally the eggs can be picked up at our shop in Forest Grove which is 25 miles west of Portland. Another popular way is to meet on the I-5 corridor, either North up to Seattle-Tacoma area or South to the Albany area, I can and do travel farther on occasion for larger orders so timing is everything! We can also ship Fresh Salmon eggs Fedex and Express or priority mail to most places in the U.S.A. and some in Canada. Alaska Air Cargo is also Available for Larger Orders. A lot of our Uncured Salmon eggs are frozen and then 2-3 day shipped to make the more reasonable on smaller orders! Here's a great recipe for all those steelhead you catch with your Sunrise Bait Cured Eggs and it works for all fish! Start by filleting your catch. Then you want to skin the fillets. The easiest way for me is to cut straight down at the middle of the fillet but not through the skin. This gives you a handle to hold, now turn the knife sideways and follow the skin to the end, then reverse and hold the loose skin and slide the knife along the skin to finish the other side. Now cut the skinned fillets into similar pieces that will cook evenly. Dip the fillets in egg wash, roll in crush saltine crackers, I use a rolling pin and a zip lock bag to crush mine, then fry in 1/2 butter 1/2 vegetable or olive oil. Season while frying with your favorite seasonings and when they are brown they are done! Be sure and not to overcook, you might have to sample some right out of the pan to be sure! I always do.
